Usually, busy with her after-school program; teaching students; talking with their parents, teachers and principals; and raising money for scholarships, Esther found herself stuck at home and her students’ parents were working while having to take care of their children.

They messaged her, “Esther, please help! We don’t know what to make for breakfast, lunch and dinner for our kids and ourselves. We’re bored with our usual meals. Please help!”
So she put on her recipe developer hat and created recipes using “5 ingredients in under 20 minutes”. She shared these recipes with friends and family on Facebook not only so they could make it themselves but also to keep up their morale.
